Ingredients

  • 2 oz Northern Eyes 7 Year Whisky
  • ¾ oz fresh lemon juice
  • ½ oz peach liqueur (e.g. Mathilde Pêche)
  • ½ oz simple syrup
  • 1 oz egg white
  • 2 dashes Angostura bitters on foam
  • Dehydrated peach slice to garnish

Method

  1. Dry shake all ingredients (without ice) for 15 seconds to build foam.
  2. Add ice and shake vigorously for another 15 seconds.
  3. Double strain into a chilled coupe glass.
  4. Dot Angostura bitters on the foam and drag a toothpick through for a design. Garnish with a dehydrated peach.
