As far as aged whisky goes, three years may not seem like a long time. However, in Edmonton’s very new craft distilling industry, three years is not only significant – it’s historic!

Handcrafted by distiller Kris Sustrik using 100% Alberta rye, and aged for three years in a single American oak barrel.

Proofed down to 43% ABV

Tasting Notes

  • Nose: Pear, leather, and tobacco
  • Palatte: Savoury and spicy with notes of dark caramel, mild vanilla, black pepper, and caramelized banana.
  • Finish: Crisp with spiced pear while the barrel char and mild tobacco notes linger long afterwards

Hansen Distillery is delighted to share our second expression of Northern Eyes Whisky.

Northern Eyes 5 Year Whisky carries on the tradition of single barrel, 100% Alberta rye whisky. It is aged in our signature new American oak casks and bottled at 100 proof, in combination with pure Alberta spring water.

Easy on the eyes, the hue is reminiscent of golden raisins. The nose presents warm vanilla, fresh baking spices, and rye stone fruit. Upon first sip, you’re greeted by rich butterscotch and a decadent vanilla custard. The finish features notes of warmed black pepper and the familiar Northern Eyes tobacco and oak tannins.

  • Appearance: Golden amber
  • Nose: Vanilla, baking spices, stone fruit
  • Palatte: Butterscotch, vanilla custard with notes of pepper and tobacco
  • Finish: Charred oak finish with a hint of wild tart cherry

Never shying away from a bold whisky, this latest Hansen Distillery Northern Eyes release is a 7-year, 100% Alberta rye whisky, aged in a single cask of new American Oak. This beautiful, golden amber spirit has aged on Alberta soil, with our temperature fluctuations from minus forty to plus thirty, bringing out a uniquely Albertan whisky that reflects the best we have to offer.

Tasting Notes

  • Nose: Baking spice and caramel, layered with warm apple crisp and cinnamon, reminiscent of an Alberta evening harvest.
  • Palatte: Creamy toffee unfolding into early-season stone fruits. 
  • Finish: Well-rounded finish with notes of baking spices, reminiscent of a lingering, warm apple pie fresh from the oven.

Hansen Distillery is proud to offer our very own line of Distiller’s Edition Whisky.

Each edition is a limited series of single barrel whisky that has been handcrafted by the Head Distiller as he explores new and unique expressions of his whisky.

Old No.7

Hansen Distillery is honoured to present a one-of-a-kind, bourbon-influenced, Canadian whisky single handedly produced by our Master Distiller. The mash bill consists of 51% corn, and 49% rye, aged in a single infamous Tennessee whisky barrel for 56 months. The nose greets you with notes of delicate vanilla, salted butter, and ground pepper. The palate distributes slight tannins, renowned maple charcoal, and layers of rich caramel popcorn. The finish lingers of toasted corn nuts, pressed apples and iconic sour mash. 750mL | 61.8% ABV | 123.6 PROOF

French Oak x Port Cask Whisky

This first expression is a single barrel offering of 100% rye grain, carefully aged first in French Oak that once held red wine, and then transferred to a former port barrel to finish the aging process. 750ml / 47% ABV

Cross Border Edition

Three groups of whiskey enthusiasts, PWS Imports, Boulder Spirits, and Hansen Distillery, connected over their shared passions which have come together for a unique cross-border collaboration. This whisky marries sherry-influenced bourbon with a traditional Alberta Rye. A year prior to bottling, a cask from Boulder spirits travelled north from Colorado, along the Rocky Mountains, before landing in Hansen’s home in Edmonton. The marriage of the sherry cask and Hansen’s Northern Eyes 100% rye whisky has created a distinctive and remarkably flavourful profile. We are proud of how this experiment turned out and are excited to share it with you. 50% ABV

Dark Cloud Whisky

We started out as neighbours, became friends, and now, partners. The DarkCloud and Hansen Distillery have teamed up to bring you a one-of-a-kind Single Grain Whisky. This spirit has been 100% distilled at the home of Edmonton’s first whisky, and blended by The DarkCloud himself. This whisky is as unique and interesting as the people behind it. Expect to have your senses tantalized by multiple cask and grain types coming together in harmony. This spirit leaves you begging for another sip.

Sherry Cask

This beautiful sherried whisky is made from a spirit laid down for 22 months in French Oak casks, followed by resting in sherry casks for 41 months. Ideal for the whisky connoisseur; Hansen Distillery is proud to release the second expression in our Distiller’s Edition Whisky lineup. The palate is welcomed with rich cherry, black currant, light vanilla, and notes of subtle pepper. Benefitting from being bottled at cask strength, this whisky has lots of character from the sherry casks, pairing well with a soft or sharp cheese.
