Eighty-four months in new American oak. Then, just when it seemed finished, twelve more months resting in an ex-sherry cask. That’s the timeline behind Hansen Distillery’s 7 Years Northern Eyes Sherry Cask — a whisky that took its time, on purpose.

The sherry cask finish transformed the spirit into a cask strength expression that opens with dark fruit — ripe cherry and black currant — before settling into warm vanilla, then finishing with a cracked pepper bite that reminds you exactly what you’re drinking. Bottled at 54% alc./vol., non-chill filtered, no water added. Just the whisky, exactly as it came off the cask.

Seven years in the making. Nearly eight, if you’re counting closely.

Nose: Plum and spiced vanilla, with hints of candied citrus.

Palate: Overripe plums, black currants, almonds, and chantilly cream.

Finish: Stonefruit nectar and peppery cloves, with a hint of leather.
